Taco Tater Tot Casserole Recipe

Tater tots, tacos, and cheese. An easy to make dinner that the whole family will love.

  • 1 pound Ground Beef
  • 1 Small Onion, finely diced
  • 1 clove Garlic, minced
  • 1 can (4oz) Diced Green Chiles
  • 1 packet Taco Seasoning Mix
  • 1 can (15oz) Black Beans, rinsed and drained
  • 1 can (14.5oz) Corn
  • 2 Cups Shredded Mexican Blend Cheese, divided
  • 28 oz Mini Tater Tots
  • 1 can (10oz) Red Enchilada Sauce
  • Optional toppings: Olives, Cilantro, Sour Cream, Salsa, Tomatoes


  1. Preheat oven to 375 degrees F and grease a 9x13 backing dish.
  2. In a large skillet, cook the ground beef and onion until beef is browned. Add the garlic and cook for an additional 1 minute. Drain.
  3. Mix the green chiles, taco seasoning mix, black beans, corn, and 1 cup shredded Mexican blend cheese. Transfer to prepared 9x13 baking pan. Spread into an even layer.
  4. Layer the mini tater tots evenly on the top of the taco mixture. Pour the enchilada sauce evenly over the tater tots. Bake uncovered for 30-40 minutes, or until mini tater tots are crispy.
  5. Sprinkle the remaining 1 cup of shredded Mexican blend cheese on top and continue to back for 2-3 minutes, or until cheese has melted.
  6. Allow to cool before serving. Top with optional toppings as desired.
