Easy peasy. I used to hate that phrase. Up until my daughter started saying it. Then it transformed from overdone to cute. Today’s recipe from Simply Quinoa promises to be just that. Easy Peasy.

 

I like to make Friday nights a family night, though we are not entirely consistent!  Some weeks we have family game night – which has gotten harder to do now that we have a 2 year old that thinks it’s fun to pull all the pieces off the board. Other weeks we have pizza night. Some of my fondest memories are of pizza night. It’s just so peaceful for those 5 minutes that we are making the pizza.  5 short minutes. Oh, but how I love my few peaceful moments of the day.

 

This week I decided to combine my 30 Day Challenge bake with our family pizza night. I chose a pizza crust recipe from Simply Quinoa.  I was excited about this recipe because of the ingredients.  There are only four ingredients and it is simple to make. Yay!  But the best part is the main ingredient is Quinoa. Cauliflower and brown rice can give me headaches. And since that is what most GF pizza crusts are made of, my options have been limited.  That’s why I was so excited to try this Quinoa based GF pizza crust!

I did not alter the recipe in any way. You can find it here from Simply Quinoa. The only thing I had to do differently was adjust my pan size. I have 8″ and 10″ cake pans, but no 9″ pan!  I decided to go smaller and used my 8″ pan. In retrospect, the 10″ pan would probably have been better. The crust was a little too thick for my liking.

 

Ok, so here is how simple this recipe truly is:

 

You let Quinoa soak for 8 hours. Just put it in some water before leaving the house in the morning and it will be ready for dinner time.

 

Then, put all the ingredients in a blender until puréed.
Put the dough in a cake pan lined with parchment paper. The directions said to use 1 tablespoon of oil to grease the parchment paper. I found this to be excessive and could have put that oil in the dough batter instead.

Bake as directed. And flip the dough over halfway through baking. Wait, what?  You’re supposed to flip the dough?  How do you do that?!  I used an extra sheet of parchment paper, put it on top of the cake pan. Then I flipped the dough over and removed the original parchment paper. Easy peasy!
After the dough has baked, it’s time to add sauce, cheese, and any kind of toppings.  Then bake to cook the toppings and it’s ready to eat!

 

The next time I make this pizza dough, I’m going to make a Mexican pizza. The Quinoa tastes a bit like black beans in this recipe, which would be a fantastic paring with Mexican flavors!

 

This recipe is definitely worth trying, I ate over half of it myself at dinner tonight. 😊 And my son enjoyed a piece as well.  Anything kid approved must be good, right? But it is not like a non-gluten free pizza. I would improve upon it by making the crust thinner (10″pan) and by trying a Mexican pizza.  You will have a great meal. Just don’t expect a New York style pizza to come out of the oven.
