For lunch today, I made these wonderful Cheeseburger Tots. They aren’t the sexiest looking things. But what they lack in looks, they make up for in taste! They are lined with tater tots, filled with seasoned hamburger, and topped with cheese and a special sauce. What could be better than that??
My idea of cooking during the week is something that takes less than 30 minutes from start to end and uses as few dishes as possible. When we get home at night, the kids want dinner immediately. Anything longer than 30 minutes just won’t do! That’s why I like this recipe. It takes less than 30 minutes (including chopping!) and only has a few dirty dishes.
Step 1 Preheat oven to 425 degrees F. Lightly grease a muffin pan. Line the bottom of 12 muffin cups with frozen tater tots. Use 5 mini tater tots or 3 regular tater tots per cup. Bake for 10 minutes.
Step 2 Brown 1lb ground beef in a large skillet over medium high heat. Meanwhile, dice an onion and add it to the beef. Continue to cook until the beef is browned and the onion is soft. Drain.
Step 3 Add 1 tablespoon each of ketchup, yellow mustard, and sour cream to the beef mixture. Add 1/2 teaspoon of salt and 1/4 teaspoon pepper. You may also add 1 tablespoon of relish. Mix well.
Step 4 After cooking the tater tots for 10 minutes, remove from the oven. Split the beef mixture evenly between the muffin cups, on top of the tater tots. Sprinkle 1 cup if cheese on top. Bake for an additional 10-15 minutes.
Step 5 Prepare the special sauce while the cheeseburger tots are baking. Mix 1/2 cup of sour cream, 2 tablespoons of yellow mustard, and 1 teaspoon each of white wine vinegar, paprika, onion powder, and garlic powder. You may also add 4 tablespoons relish if desired.
Step 6 Remove cheeseburger tots from the oven and let stand for 5 minutes before removing from the muffin cups. Top with the special sauce and serve warm.
