When I first tasted this Gluten Free / Low Sugar Coconut Cheesecake, what came to mind was “Damn, that’s good”.  Few desserts stop me in my tracks by just how surprisingly delicious they are. There’s something about toasting coconut or nuts that always had me cringing.  The thing is, I just couldn’t seem to not overdo it and I ended up with burnt nuts every time.  Now, I have a better method!  Ok, so it’s really not the revolutionary, but it works!   Most directions tell you to toast the nuts for 5-10 minutes, or something along those lines.  So what do you do?  You put them in the oven and you wait 5 minutes before checking on them again.  If they aren’t done, you stick them back in for another few minute before checking…

I saw this Pull Apart Pizza Bread that I thought my kids would really enjoy eating. Now, I know better…  my kids don’t care how “fun” food looks. My 2 year old will eat whatever is in front of him, as long as he feels like it. My 5 year old won’t eat anything that is outside of the standard 5 foods: PB&J, Pasta, Chicken Nuggets, Hot Dogs, or Pizza. I have a bit of an obsession with adding tater tots to foods all of a sudden.  Can you really blame me?  I suppose I have gone a tad overboard.  First, I made these cheeseburger bites.  Then, I made a Taco Tater Tot Casserole.  Now…  Are you ready for this?  Chicken & Rice Without The Rice.  By substituting tater tots for the rice, this transforms into a dish I miss eating (I can’t eat rice) to a dish I covet.   I first got the idea of substituting tater tots for the rice when I was making the Taco Tater Tot Casserole….
